Ugh, that's the worst. I've had to do that exact emergency fix for a client in Houston. You gotta soft proof in Photoshop with the printer's specific profile, then convert the whole thing to CMYK using that same profile before you send the files again.

But keeping it in RGB is just asking for color shifts on press.

Actually, for most print workflows, you should convert to the printer's profile but keep the file in RGB until the final export.
