Vent: My cousin in Austin swore by airlocks for kraut, but I saw his setup
I visited him last month and he had three big jars of cabbage fermenting on his kitchen counter. He pointed at them and said, 'See, no fancy gear needed, just a cloth and a rubber band.' His kraut looked perfect, no mold at all. I always thought you had to buy special airlocks to keep things safe. Now I'm wondering if I wasted money on all that equipment. Has anyone else made great kraut with just a basic cloth cover?
