TIL my neighbor thinks his kombucha is done when it stops fizzing after 2 days

I mean, I had to gently explain that my SCOBY from a batch last fall took a solid 7 days in my 72-degree kitchen to get properly tart, and now he's asking me to check his next attempt.

Oh man, that's like pulling cookies out when they're still dough... I tried to rush a batch once because I was out and really wanted some. Drank it way too sweet and gave myself a weird stomach ache. Now I just set a phone reminder and try to forget about it for a week. The waiting is the hardest part.

My first batch was just fizzy sugar water for like a week before I figured it out.
