Can we talk about how a comment from my neighbor wrecked my whole kombucha process?
She saw my SCOBY hotel and said, 'You know, keeping that many just makes them all weak,' and now I'm questioning my last 3 batches. Has anyone else heard this or is she just messing with me?

Honestly, that sounds like a weird myth. If your batches taste fine, it's probably fine.

Weird myth? Tell that to my friend who got sick from some old chili she thought was fine. Taste isn't a safety check. Botulism doesn't change the flavor at all. You can't taste spoilage bacteria either. Just because it seems okay doesn't mean it is.

10 years ago I knew a guy who ate week-old burrito from his fridge and swore it tasted great, then spent 3 days in the hospital with salmonella. That same pattern happens all the time with people ignoring expiration dates on stuff like deli meat or dairy because it looks fine. We live in a world where we trust what we can see or taste more than the actual science, and that gets people sick way more than they think it does.
