I finally learned why you shouldn't trust the 'best by' date on condiments

I kept a jar of fancy mustard in my fridge for 18 months because the date said it was still good, then I ate it at a cookout last Saturday and spent the whole next day regretting every penny of the $9 I wasted on that fancy brand.

Dang, that’s rough. But seriously, was it sitting in the fridge the whole time with the lid on tight, or did it get opened and forgotten about? I’ve had a jar of Dijon for like two years that’s still fine because I keep it closed and cold. Condiments in the door get way more temp swings too, that’s what kills em faster in my experience.
