Watched a old-school butcher break down a whole hog in 12 minutes flat at the Iowa State Fair last month
He was using this beat up 8-inch scimitar and never even touched the saw, made me rethink my whole approach to splitting ribs - anyone else ever ditch their saw for just a good knife?

That bit about the scimitar and no saw is exactly it. I switched to a curved breaking knife after seeing the same thing and never looked back, just takes some practice on the feel.

Give the curved breaking knife a fair shot for a few weeks, it really does change how you move through a side. Just don't expect it to work as well on larger primals with thick fat caps, you'll still want a long straight blade for those. Stick with it on the smaller stuff and you'll feel the difference in your wrist by the end of the month.
