One customer tried to tell me how to trim a brisket, I still think about it
Had a guy come in around 2 PM last Tuesday, pointed at my flat cut and said I left too much fat on the deckle side. He wasn't rude, just firm, like he'd watched every BBQ youtube video out there. I asked him how long he'd been breaking down primals and he admitted he'd never done it himself. I let him watch me trim the next one and explain why I leave that fat for the pit. He ended up buying both briskets and apologizing before he left. Has anyone else had an armchair expert question their cuts?
Wait he bought BOTH briskets after all that? Man was trying to school you and then dropped like a hundred bucks out of guilt. I woulda been way less nice about it.
