Old timer told me my knife angles were off after 20 years of doing it my own way.

He showed me a 10 degree tilt on my boning knife that cut my trim waste almost in half on a single side of beef, and now I check my angles every morning before the first cut - anyone else had to unlearn bad habits that old?
