My trim bin went from 12 lbs of scrap a week to 3 after I fixed one dumb thing
Six months ago I was throwing out about 12 lbs of good trim scrap a week at my shop in Erie. I blamed my guys and even blamed the cheap grinder for a while. Turns out it was my own knife work holding the blade too flat on the silverskin, so I was shaving off meat instead of just the membrane. I switched to a steeper angle and a 6 inch stiff boning knife, and within 3 weeks the scrap bin dropped to about 3 lbs a week. Nobody changed their speed or anything, it was all in the cut. That scrap was costing me around $90 a week and I was ready to blame the crew for it. What angle are you all running on silverskin, because I think I still leave a little meat behind.
