My new boning knife from that shop in Kansas City started chipping after just two weeks on a standard lamb breakdown.

I learned the hard way that a bargain 'professional' steel can't handle the daily grind, so what's your go-to brand for a knife that actually lasts?

Ever see a knife just give up? My buddy Mike bought a slick looking chef's knife from a market stall, said it was forged by some old world guru. It snapped clean in half the first time he tried to joint a chicken. The look on his face was pure shock. He uses Victorinox fibrox now, says they're boring but they just work.

Oh man, that reminds me of my friend Carla. She got this beautiful Japanese knife as a gift, all fancy packaging. She was so proud of it. Used it to slice a big, crusty loaf of sourdough bread, just a normal cut. The tip snapped right off and flew across the kitchen. Turns out it was super hard but also super brittle. She went back to her old, beat up Dexter she's had for years. Some tools are just for show.
