I finally switched to whole animal butchery and it's a total game changer
After 8 years of just breaking down primals, I spent last Saturday processing a whole hog at a shop in Portland. The difference in meat quality and yield was night and day. Got way better cuts for my customers and saved about 30% on cost per pound. Anyone else made the jump from boxed meat to whole animals?

Bet you felt like a medieval knight or something, all that wrestling and carving up dinner. Hope whoever did the butchering got a bigger slice than the chiropractor did.
