I finally figured out why my whole hog break down went 40 minutes faster last Thursday
Last Thursday I did four hogs before noon at our shop in Waco. Normally that same run eats up half my day. Nothing changed with my knives. Same scimitar, same boning knife I've had 6 years.
What changed was I quit trimming as I went. I used to stop at every primal and clean it up, get mad at little bits, re-cut stuff. My old lead Marcus used to say rough it all out first, clean it after, and I always nodded like yeah sure. Thursday I actually did it. Rough broke all four hogs into primals, stacked them on the rail, then went back through with the trim knife. Saved me about 40 minutes total.
Feel dumb it took 11 years to listen. Wondering if anyone else cuts this way or if I'm late to something obvious. How do you all handle trim during a big break down?

Wait, 40 minutes off four hogs? That seems like a lot for just changing up the order you do stuff in. I rough out and trim as I go and I've never timed a difference that big. Maybe your knives were just sharper that day and you didn't notice.
