I always thought the saw was the only way to split a hog, but a guy in Omaha changed my mind
For years, I'd use a bandsaw on every carcass, thinking it was the fastest and cleanest method. Then at a shop in Nebraska, an older butcher watched me for a minute and just said, 'You're working too hard, kid.' He showed me how to use a cleaver and a mallet to follow the natural seams, and it's way faster on the primal cuts. I've saved about 15 minutes per animal since I switched. Anyone else use this old-school method for breaking down larger hogs?

My uncle used to say a sharp knife beats power tools every time. He'd break down a side of beef with just a boning knife and a hand saw. Watching him work made me respect the old ways more.
