Hit 1,000 pounds of trim saved this year and my scrap guy thinks I'm nuts
So I started keeping a tally back in January, mostly as a joke because my apprentice kept tossing good fat in the trash. Every time I saved trimmings for sausage or tallow or the dog food guy, I'd mark it on the whiteboard by the walk-in. Last Tuesday I added it all up and it came to 1,004 pounds since New Year's. That's over half a ton of stuff that used to go straight in the dumpster behind the shop on 9th Street. My render guy Sal actually laughed when I told him and said he'd been trying to get other shops on the block to do the same for a decade with zero luck. The weird part is the money, because between the tallow buckets and the ground pork trim I'm clearing about $180 a month I never used to see. My apprentice still rolls his eyes every time I hand him a clean bucket, but he stopped throwing fat away. Anybody else track their trim weight or am I the only weirdo with a whiteboard full of numbers?
