Grinding my own burger blend felt like overkill until I did it once
I always bought pre-ground chuck from the store, figured grinding my own was just extra work for no real difference. Last Tuesday I picked up a brisket end and some short rib trimmings, ran them through the grinder myself, and the texture and flavor on the patties was night and day. Anyone else get surprised by how much better homemade grind tastes even with basic cuts?

Wait, you mean the pre-ground stuff has a metallic taste? @lucas63 is that really a thing? I always thought that was just from the pan or something, never even crossed my mind it could be the packaging. That blows my mind a little.

There's something about how the fat renders differently when you grind it yourself compared to pre-ground stuff that sits in a tube. The pre-ground gets that oxidized grey color way faster, and you can taste that metallic edge from the packaging. Homemade grind lets you taste the actual meat instead of the process it went through.
