Counted 47 pork butts before the lunch rush and finally understood the yield chart
I've been cutting the same way since I started, but weighing every trim pile last Tuesday at the restaurant showed me I was tossing almost 2 pounds of usable meat per case. Anybody else track their trim weight, or am I the only one who had to see the number to believe it?
Trim weight is how you steer and how you stop, so calling it waste misses the whole point of why it is there. Every ounce up high on the tail costs you in a climb or a gust, and the plane handles like a pig when it is gone. Dead weight you haul around is one thing, but the parts that keep you flying straight are not the same as junk in the baggage bay.
