Can we talk about breaking down a whole pig for the first time?

Tried a whole hog for a wedding order last Saturday. Took me nearly 4 hours just to get the primals right, way longer than the 90 minutes my mentor said it would take. Anyone else find pork shoulders way trickier to separate than beef?

Wow, I gotta push back on that hard. @grayw32, calling it "just meat" really misses the whole point of what hunting teaches you about respect for the animal. The process of field dressing and butchering is absolutely a skill that takes practice to get right, same as any surgical procedure. You're separating connective tissue, avoiding puncturing the guts, and making clean cuts so nothing gets wasted. There's a huge difference between someone who just kills an animal and someone who knows how to properly break it down. If it was really "just meat," then everyone would be fine with store bought and nobody would bother with the work of hunting it themselves.
