Why does everyone wrap their brisket in foil instead of butcher paper?
I watched 3 guys at a comp in Kansas City last weekend all foil up their briskets right after the stall, and I swear they all ended up with steamed bark that peeled right off. Am I missing something, or is butcher paper just the way to go for a good crust?

My bark game is just sad enough that I'm scared to try anything but paper.

Oh, honey, I feel you so much on this! @emma349 my bark game is so weak that my dog probably thinks I'm just making weird sounds at him when I try to sound tough. I once yelled at a squirrel and it just stared at me like I was a malfunctioning lawn ornament. Paper is safe and forgiving, and honestly, there's nothing wrong with sticking to what works. I've tried cardboard and it just felt like I was cheating, you know? Stick with paper until you're ready for the big leagues, but even then, don't feel bad about sticking with what makes you comfortable.
