Watched a pitmaster in Kansas City trim a brisket last weekend

I was down in Kansas City visiting family and stopped by a competition BBQ spot on Saturday. This guy named Ray took about 45 minutes just trimming a single packer brisket, showed me how he leaves a quarter inch of fat on one side and takes almost all of it off the other. Does anyone else spend that much time on trimming or am I just being too slow about it?

Holy cow, 45 minutes just on trimming?! That's insane, I usually spend maybe 10 or 15 minutes and call it good enough.
