Watched a pitmaster at a little joint outside Austin last week...

Three years ago I stopped at a roadside BBQ spot near Lockhart and didn't think much of it. Last week I rolled through again and watched an old guy wrap his brisket in butcher paper so careful it was like he was tucking in a kid. How many of you have seen a technique that looked simple but took years to really nail?

That wrapping moment is pure poetry, isn't it? The old guy I saw outside Lockhart did this thing where he'd pat the paper down with his palm, real slow and gentle, like he knew exactly how tight to go so the bark stayed crunchy. It made me realize barbecue isn't about rushing at all, it's about trusting your hands to know when something's done right.

Seriously underrated skill. Wrapping brisket like that takes years of feel, not just following a recipe. It's one of those small things that makes all the difference in the end.
