Warning: My smoker thermometer failed mid-cook last Saturday
Was doing a brisket for a family gathering and my probe started reading 250 when the pit was clearly at 300. Had to finish the whole thing by feel alone and the flat came out dry.

Finished the whole thing by feel alone" is basically my entire cooking philosophy at this point. My trust level with thermometers is so low I half expect my instant read to tell me my brisket is done when it's actually a brick. But hey, at least the family got a story out of it, even if the flat was basically beef jerky.

Wait did you actually cook the whole brisket by feel? That's wild. I tried that once with a pork shoulder and ended up pulling it off the smoker at like 140 degrees cause it felt too soft. My wife still brings it up at family dinners like it's a war story. But honestly I think there's something to cooking by feel, it's just that sometimes your gut feeling is wrong and you end up with meat that could double as a hockey puck. At least you got a good story out of it though, those are the meals nobody forgets.
