Vent: Talked to a pitmaster from Kansas City who said wrapping in foil is cheating

He told me after 20 years of cooking comps he's never once used foil and thinks it just steams the meat instead of building bark, and now I'm sitting here wondering if I've been ruining my brisket this whole time - anyone else ever get called out like that and have to rethink their whole process?

What is it about foil that scares people so much? I mean, it's not like you have to sign a contract to try a piece of it. Pretty sure it's just thin metal, not a life commitment.

Honestly though, is it really that deep? Like @oscar390 said, 20 years and never tried it, but what's the big deal either way? Tbh, I don't get why people act like foil is some kind of huge life event you gotta mentally prepare for. It's just thin metal you can put in your mouth for a second and then spit out if you don't like it. Ngl, I think the whole "fear of foil" thing is way overblown, it's not like you're signing up for a root canal or something. People act like it's a commitment when it's really just a piece of kitchen stuff.
