Update: Finally stopped fighting my charcoal chimney after 5 years

Used to just dump the hot coals straight into the grill and get ash all over the meat. My buddy at a comp in Kansas City showed me to pour them into a metal basket first and let them settle for 2 minutes, now the heat is way more even. Has anyone else had a simple trick like this change their whole cook?

Wait, are you saying you were just dumping red hot coals straight from the chimney onto your meat before? That sounds like a disaster waiting to happen. I've been using a charcoal basket with a little ash tray underneath for years, but I never thought about letting them sit for 2 minutes before cooking. How much of a difference does that wait time actually make in terms of heat distribution? I'm always rushing to get the coals on and start searing, maybe that's been my problem all along.
