Stood over a hot smoker for 12 hours... pellet vs stick burner showdown

I finally did a head to head test last weekend with my buddy's Traeger and my old stick burner offset. We both cooked the same two pork shoulders, same rub, same target temp of 225. The pellet grill was way easier to manage obviously, set it and forget it. But when we pulled the meat off and did a blind taste test with 6 people, the offset meat won every single time. The bark was darker and crunchier on the offset, and the smoke flavor was deeper, not that thin airy taste pellets give off. I'm not saying pellets are bad for weeknight cooks, but for a competition style shoulder, the stick burner just delivers. Has anyone else done a side by side like this and noticed the same thing?

My neighbor tried that and ended up falling asleep by the smoker at 3 AM.

Wow, that's terrifying. Falling asleep by a smoker at 3 AM is a disaster waiting to happen. One bad gust of wind and your whole setup goes up.
