Picked the water pan over the deflector plate for my first brisket on the Oklahoma Joe and it came out cleaner than I hoped
Ran it at 250 with a foil pan of water on the firebox side for 9 hours on Saturday in Lexington and the flat probed soft at 203 with a nice bark, so now I'm wondering if I even want to try the deflector plate next time or just stick with what worked.
