I used to laugh at pellet grills, now I own two of them
For years I was a stick burner guy, talking trash about anyone who plugged in a pellet smoker. Then my buddy Mike in Austin let me taste his brisket off a Traeger at a party last spring, and I had to eat my words. It had that smoke ring and moisture I thought only live fire could give, plus the bark was actually crunchy, not mushy like I expected. I borrowed his for a weekend, ran a pork shoulder overnight while I slept, and woke up to perfect 203 degrees without babysitting logs. The convenience sold me, but what really convinced me was the flavor holding up when I did a blind taste test with my own crew. Now I use my offset for competitions and the pellet grill for weekday cooks when I get home from work at 7 pm. Anyone else come around on them after swearing them off for years?
