I spent $150 on a remote thermometer and it saved my brisket.
Always thought I could just watch the fire, but the temp dropped overnight and the alarm woke me up. What's your go-to tool for overnight cooks?

Honestly can't imagine spending that much on a thermometer. I just use a cheap oven probe with a long wire and set the high/low alarms on my phone. Waking up to check the fire is part of the ritual for me, feels like I earned the good bark.

My first brisket I used a candy thermometer duct taped to the grate. It read 200 degrees the whole time, even when the fire went out. I've earned my share of bad bark.

Honestly that line about earning the bark really hits home. I feel like that's the thing with a lot of hobbies now, not just smoking meat. Everyone wants the results without putting in the messy work, like how people buy pre-seasoned cast iron pans instead of just cooking bacon in a rusty one for six months. Tbh @lily_ramirez4 you probably learned more from that busted duct tape setup than someone who bought a wifi controller on their first try. It's like the whole instant gratification thing, but with brisket the burns and the bad nights are what make the good ones taste better.
