Heads up about the brisket at the new joint on 5th Street in Omaha

Went there last Friday and the bark was straight up soggy, like they wrapped it way too early or something. Anyone else run into that lately, or did I just catch them on a bad day?

Soggy bark is a real crime against barbecue. It sounds like they steamed it into submission. A good bark should crackle a little when you cut it, not fold over like wet cardboard. Maybe they got nervous and crutched it for the whole cook. That's a sure way to end up with pot roast texture instead of proper brisket.

Ugh, that's brutal. Could be their smoker is running way too cold and humid. If they're not burning a clean fire or their pit's leaking steam, you're just braising meat in smoke-flavored water all day.
