Can we talk about how long it took me to fix a brisket stall on my offset smoker?

I was stuck at 160 degrees for like 4 hours last Saturday and thought my fire was dying. Turns out my internal thermometer was reading 30 degrees low because the probe was touching the grate. I spent $20 on a new one and next time I need to check calibration before I start smoking.

Cheap stuff failing at the worst time is just how life works.

Blame the timing of when you actually need it. Cheap tents fail during a rainstorm because nobody tests them on a sunny Tuesday afternoon. Same with bargain phone chargers - they die at 2am when your alarm is set for 5am. The universe just knows.
