Best brisket I ever made happened on a random Tuesday

I had a cheap flat from Costco and figured why not try it. After 14 hours on my old offset smoker near Tulsa, the bark set perfectly and it sliced like butter. Anybody else have a cook that just worked for no good reason?

...and that's exactly why I'm asking - what temp were you running? I've had those magic cooks too and it's always when the weather's off and I'm not trying hard. My best guess is the stall behaved differently that day since you didn't mention wrapping. Did you just let it ride bare the whole time? Because I've found cheap flats from Costco actually work better if you don't mess with them too much. The fat cap renders different when you're not checking every hour. So were you running 225 or did it drift higher with that Tulsa wind?

Disagree with @charles_kim here, cheap flats always dry out on me without wrapping.
