A fire in the firebox almost ruined my brisket last Thursday

I was running my old Oklahoma Joe offset for a 14-hour cook and the temp spiked to 350 degrees when I wasn't looking. It happened because I used a piece of hickory that was way too dry and it caught like a torch. Has anyone else in Texas had this happen with super dry wood they bought locally?

Tbh I saw a post on a BBQ forum last week about kiln-dried wood causing runaway temps.

Yeah, that tracks. Kiln-dried stuff has almost zero moisture, so it lights up way too fast and hot. It's like trying to control a rocket instead of a fire. You end up burning through your fuel before the meat is even close to done.

Hard disagree. Seasoned hardwood all the way. Kiln dried is for kindling, not cooking.
