After 4 years of instant pots, a $15 crockpot changed my dinner routine

I used to swear by my instant pot for everything, dumping in frozen chicken and hoping for the best. Last month I picked up a basic crockpot at a garage sale in Austin for 15 bucks, mostly out of curiosity. Turns out slow cooking does something totally different to tough cuts of meat, the connective tissue breaks down way slower and the flavor gets deeper. Now I prep chili and pot roast on Sunday morning and come home to actual dinner instead of a sad, pressure-cooked mush. The weird part is that the old tech just works better for some stuff, no beeping, no steam valve anxiety. Has anyone else gone backwards to a simpler appliance and been shocked at the results?

Wait, you actually found a working crockpot at a garage sale for 15 bucks? That blows my mind because mine cost me like 40 at Target and I thought I was stealing it.
