A thrift store cookbook quote made me rethink my grandma's pancake recipe
I was flipping through a 1972 Betty Crocker cookbook I got for $3 at a flea market in Dayton, and there was a handwritten note in the margin that said 'bacon fat, not butter, or don't bother.' That hit me because my grandma's pancakes always tasted flat to me, and she swore by margarine. I tried the bacon fat this morning and it was like a whole different food. Has anyone else found a random scribble in an old cookbook that actually fixed something you were doing wrong for years?

Wait till you try crisping the edges in the leftover bacon grease after you pour the batter. Did the note say anything about how long to let the batter rest before cooking?
