Found a 1970s church cookbook at a yard sale in Boise
It was in a box of old books. Cost me fifty cents. Flipped through it and saw a recipe for 'Watergate Salad'. My grandma used to make that. It has pistachio pudding and canned fruit. Nobody cooks like that now. What other weird jello recipes did people eat back then?

That Watergate salad is a total time capsule lol. The weirdest one I ever saw was a tomato aspic with shrimp and celery suspended in it, like a savory jello nightmare. My aunt used to make a "salad" with lime jello, cottage cheese, and canned pears that still haunts me. People back then really thought putting anything in gelatin made it fancy.

Did they ever try putting hot dogs in jello, because I swear my grandma did that once?

The tuna jello molds with olives always get me, like who looked at a can of tuna and thought "this needs gelatin and a ring shape." @vera292 your lime jello cottage cheese situation sounds exactly like the kind of thing my church potluck would've called "surprise salad" and nobody would've been surprised. I guess the 70s were just a decade where people were really committed to seeing if anything could be suspended in jello.
