My dad told me to always use a string line for a straight run, but on a 200 foot job in Austin I tried eyeballing it and had to pull out 30 posts.

Had to pull out 30 posts" is a pretty expensive way to learn that lesson. Your dad's advice was free, and you still went with the pricier option. Sometimes the old ways are the straight ways.

Wait, thirty whole posts? Honestly that sounds like a nightmare job. Tbh I can't even imagine the labor and time that must have taken. Bet they wish they'd just listened from the start. Some lessons really do cost way too much.

thirty whole posts" is exactly right, that's a brutal amount of work. I've helped a buddy dig out a few posts before and I was sore for days, I can't imagine doing thirty of them. You're right that they probably regret not listening the first time, but honestly sometimes you just have to learn the hard way. Hope they at least had a good crew helping them out and didn't have to do it all alone.
