My grandma's molasses cookie recipe changed after I left out the eggs on accident

I was baking her old recipe last christmas and realized I forgot to add the eggs. I figured they'd be ruined but they came out way softer and chewier than usual. My aunt even said they tasted just like our great grandma used to make in the 1950s. Now I leave eggs out on purpose every time. Has anyone else messed up a family recipe and ended up liking it better that way?

Did you ever try freeze drying them? I left eggs out of my Nana's banana bread once and now I cant make it any other way, it just tastes better.

Freeze drying seems like a lot of work for banana bread. I just toss the eggs in like normal and it turns out fine.
