Rant: My slow cooker saved my sanity during a 3-day power outage last winter.

We lost power in a snowstorm in Spokane, and I had just put a pork shoulder in the cooker before the lights went out, so I ran an extension cord from my car's inverter to keep it going. That one pot of pulled pork fed my family for three straight days since we couldn't use the stove. What's your go-to 'emergency' slow cooker meal that doesn't need much else from the kitchen?

My go-to is a big batch of chili with canned beans and tomatoes.

Canned beans are a total lifesaver for chili night. I always drain and rinse them first, it gets rid of that weird slimy liquid and cuts down on sodium. A good trick is to add a spoonful of cocoa powder to your big pot, it makes the flavor really deep and rich without tasting like chocolate. Letting it simmer for at least an hour on low heat is key for the tomatoes to break down and sweeten up. The whole house smells amazing and you get meals for days.
