My slow cooker saved me during a crazy Tuesday with the kids home sick

Both my boys woke up with fevers and I had a mountain of work calls to make. I remembered I had a pack of chicken thighs and a jar of salsa in the fridge. I dumped them in the slow cooker with a can of black beans around 9 AM, set it on low, and forgot about it. By 6 PM, we had perfect shredded chicken tacos ready to go with zero effort. What's your go-to 'dump and forget' meal for those totally hectic days?

Always thought slow cookers were overrated until I tried that exact recipe.

Same here... I was sure they were just for people who couldn't cook. That recipe proved me totally wrong.

Wow, guess we all owe the slow cooker an apology now.
