My cousin in Texas tried a whole bottle of store-brand ginger ale with a pork shoulder last summer. It actually made the meat weirdly sweet, like a holiday ham, which wasn't what he wanted at all. That's when I remember @kaimiller talking about cheap beer, which makes more sense to me because it adds flavor without all that sugar. The carbonation and liquid seem to be the real key for keeping things moist over a long cook. He switched to using broth with a splash of apple cider vinegar after that and hasn't looked back.
