Learned that bone-in chicken thighs actually cook faster than boneless in the crockpot
Saw a food science blog break down why bone-in thighs hit temp like 20 minutes sooner than boneless in a slow cooker. Tried it last night with a simple bbq recipe and my thighs were done at 3 hours flat. Anyone else notice this or was my slow cooker just being weird?

Bone conduction is real physics. Same concept as why bone broth gets rich faster with bones in. My crockpot chicken thighs with skin on were fork tender at 2.5 hours once. Blew my mind.

The first time I tried bone-in chicken thighs I was skeptical too. I figured the bone just got in the way and added nothing to the cooking. But after about 2 hours on low heat I pulled them out and they fell apart like nothing I had ever made before. The meat stayed juicy all the way through and the flavor was way deeper than boneless cuts I used to do. Now I actually seek out recipes that call for bone-in meat because I know it works better. I was totally wrong about bones being useless.
