Why does nobody talk about the water temp thing my uncle told me over Thanksgiving
My uncle has been making pour over in his kitchen in Sacramento for like 15 years and he told me something during Thanksgiving that I keep thinking about. He said he stopped chasing the perfect bean and the perfect grinder and just started paying attention to his water temp with a cheap thermometer he got for $12. He said he was brewing way too hot for years and his cups always had this sharp bitter edge he blamed on the roast. He let me try two cups side by side, one at a rolling boil and one he let sit for a minute, and the difference was real. The second cup was sweeter and I could actually taste the nutty thing he kept talking about. I've been brewing for maybe 3 years and never once checked my water temp, just trusted the kettle click. Now I'm wondering how many bags of beans I blamed for being bad when it was me all along. Has anyone else had their whole brew routine flipped by one small tip like that?
