Switched to a gooseneck kettle for my pour over and the taste is night and day

I used a regular kettle for two years and my coffee was always a bit bitter. Got a $40 gooseneck last week and the control is insane, my morning cup is suddenly sweet and clear. Anyone have tips for the best pour speed with a light roast?

Took me a while to find the right speed for light roasts. I do a slow, steady pour for the first half to really saturate the grounds, then speed it up a bit to keep the water level right. That gave me way more clarity without losing the good flavors.

Took me about three bags of Ethiopian beans before I got it right. I was doing too fast of a pour and it was coming out sour every time. Finally tried a slower pour for the first 30 seconds, just enough water to cover the grounds, then waited 15 seconds before adding more. That little pause really let the bloom do its thing. Now my cups are way cleaner and sweeter.
