Stop weighing your beans in the hopper, you're chasing a number that doesn't matter
I keep seeing people post their brew ratios down to the hundredth of a gram and I need to say something about it. For about 2 years I was doing the same thing, dosing 18.0g in, 36.0g out, and wondering why my shots tasted thin and sour on some days and bitter on others when the numbers were perfect every time. Then a barista at a shop in Portland named Dee watched me pull a shot on my home setup and told me my scale was sitting on a wobbly part of the drip tray, so the reading was drifting by almost a gram during the pour. I moved the scale to a flat spot and the same beans suddenly tasted way more balanced, same recipe, same grinder. The number in the cup matters way less than people think, what matters is whether your scale is telling you the truth and whether you're actually tasting instead of just reading. I also stopped chasing exact ratios and started adjusting by taste, and my coffee got better in like 2 weeks. Anyone else find out their gear was lying to them the whole time?
