Spent 20 minutes dialing in my grinder this morning and still got a bitter pour-over

I was at my kitchen counter in Denver, tweaking the grind setting on my Baratza Encore for the third time this week. Ended up with a cup that tasted like ashtray water and I just dumped it down the sink. Has anyone else had a grinder that just refuses to stay consistent between batches?

Wait did you change beans recently? I used to think the Encore was rock solid but swapping from a light roast to a dark totally threw mine off, definitely made me reconsider how sensitive these things are.

Little adjustments ripple into bigger stuff than we expect. A bean swap throws off your whole morning routine, and suddenly you're noticing how tweaking one small thing messes with everything else.
