My daughter pointed out I was brewing my morning cup with water straight from the hot tap, which explained the flat taste I'd tolerated for a decade.

She learned in her chemistry class that hot water from the heater can pick up minerals and metals, so I tried a kettle for the first time last Tuesday and the difference in my Sumatra beans was like night and day.

That's a wild thing to learn after ten years lol. Good on your kid for paying attention in class. I'd be so mad at myself for missing out on good coffee for that long. The hot water tank thing makes total sense when you think about it.

My old Mr. Coffee machine used tank water for years and I never questioned it. After reading this, I tried boiling filtered water in a pot like @nina_ramirez mentioned, and my cheap grocery store blend actually tasted like coffee. Guess I owe my taste buds an apology.
