Debate: Should we dial in a pour over by taste or by numbers?
My friend at the local roastery told me I was overthinking my V60 recipe with timers and scales. She said just taste the coffee and adjust from there, not worry about hitting exactly 2 minutes 30 seconds. But I changed my approach after she pointed out my water temperature was way off based on the flavor alone. Now I'm torn. Do you go by the clock and weight, or do you let your tongue decide and adjust as you go? What side works better for you?

Numbers got me consistent. Flavor dialed in the adjustments.

Man I get that... tracking numbers changed everything for me too. Took me months to realize I was chasing the wrong variables though. Used to log everything but forgot to adjust for temperature swings... big mistake. @charles_kim ever mess with humidity readings? The numbers tell a different story when the moisture level changes in the beans.
