Can we talk about the water at my local coffee shop?

I stopped into a small cafe in Austin last Tuesday for my usual pour-over and something tasted off. The barista mentioned they just switched their water filter system and I could tell the difference right away. I never realized how much the water quality changes the flavor of the coffee. Has anyone else noticed this when their shop changes something basic?

A friend of mine swore by this tiny shop in Portland until they swapped their filtration system. She said the coffee went from bright and clean to tasting kind of flat and mineral-y overnight. Took her weeks to finally just ask what changed, and yep, it was the water.
