Took photos of mammatus clouds with my phone vs a proper camera last month

Phone picked up none of the texture but my old Canon showed every little pocket and bubble, made me wonder if anyone else has been surprised by what their gear misses up there?

I mean, I had kind of the opposite experience with my phone actually. I was up in Colorado last July and the mammatus clouds were so defined my iPhone caught every single bubble even at sunset, while my friend's Nikon was struggling with the dynamic range. Maybe it's just the lighting or the specific cloud formation that day though.
