Walk-in prep used to be my nightmare, now it's my 15 minute ritual
I used to walk into my walk-in with no plan, just grabbing stuff as tickets came in and it took forever. About 8 months ago after a brutal Saturday in Austin I started doing a full mise check every morning at 9am sharp, writing down what's low and what's almost dead. Now I spend 15 minutes doing a quick pull and rotate before service, and it saves me at least an hour of scrambling during the rush. Anyone else switch from reactive to proactive prep, or do you still live in the chaos? What made you flip?
