The old ticketing system numbers caught me off guard today

I was digging through our kitchen's old order tickets from 2009, just cleaning out a drawer in the office, and counted 84 covers for a random Tuesday in March. That didn't seem wild until I looked at last Tuesday's count, which was 112. We have way more tables now, bigger menu, two extra cooks on the line, but the pace feels slower somehow. Does anyone else notice that the numbers go up but the rhythm is not the same as the old days?
